Handled with Care for Top Quality
St. Jude tuna is troll caught on individual hooks & lures dragged behind the boat. Each fish is landed individually on a cushioned platform to prevent bruising. They are cleaned & hand filleted immediately, then blast frozen in oversized blast freezers onboard ship to ensure their highest quality is preserved. Each day’s catch is limited to ensure the freezers are never overloaded.
After arrival at shore, each BPA free can is hand packed with solid meat. The tuna is then cooked in the can in its own juices.
More Sustainable & Lower Mercury
St. Jude tuna is caught using troll fishing. This method is unusual in the albacore fishing industry, but is much more sustainable and dolphin safe, with a negligible risk of bycatch. St. Jude tuna is Marine Stewardship Council certified.
In addition to being better for the environment, this method tends to catch younger, smaller albacore. They have accumulated substantially less mercury than the larger fish caught by industry standard longline fishing. Albacore caught on the St. Jude average about 15 pounds compared to the 50lbs industry average. They have had their catch mercury-tested several times, with the average results being about a third of that found in most industrial canned tuna.
Family Owned & Operated
The St. Jude is a 95-foot troller vessel based out of Seattle Washington. It fishes for 12 months out of the year, exclusively for albacore tuna, in the North Pacific during the summer and the South Pacific in the fall.
The St. Jude is owned by the Malley family. Joe Malley has been involved in commercial fishing since 1978, and the Malleys lived & fished aboard the vessel for 12 years before starting a family & shifting to marketing its catch.
