Mugolio pinecone bud syrup is a rare, unique, and wonderful condiment or
ingredient made from hand-foraged pinecone buds collected in Italy’s
Dolomiti Alps National Park. Its flavor is a bold, complex, intriguing
blend of sweet, piney, resinous, maple-y and herb-y flavors.
Enjoy it as an alternative to maple syrup on hot cereals, pancakes,
or waffles, drizzle it over desserts, use it to glaze meats, or as an
ingredient in exceptional cocktails.
To produce this syrup, expert forager Eleonora gathers Mugo pine buds
by hand as she walks the park in early May. Because of the delicate
eco-system and her knowledge of sustainable foraging, she is one of the
few residents of the area authorized to do so. The buds are then
macerated with water and sugar through the hot summer into September.
The resulting must is filtered and then cooked, with additional sugar,
over a low fire until it forms this thick golden brown syrup.
