Purple corn flour can be used as a flour or natural colorant in beverage, dessert & baked good recipes. In Peru it’s often used in chica morada, purple corn pudding (mazamorra morada) and chichi sherbet.
Purple corn flour can be used as a substitute for cornmeal or regular corn flour in recipes.
When adapting wheat flour recipes to use purple corn flour, substitute purple corn flour for up to 1/3rd of the wheat flour called for.
