Shrubs are refreshing vinegar-based beverages balancing sweet with
tart & tangy. This shrub balances the fruity, musky flavor of
foraged wild huckleberries with bright champagne vinegar. It’s
delicious mixed with sparkling water to taste, or used as an ingredient
in gin cocktails.
In addition to being used in beverages, this shrub can also be used as an ingredient in dressings and desserts.
Shrubs (and their close cousins, switchels) have a long history –
they’ve been consumed in the US since the colonial era and have even
been mentioned in stories by Melville and Laura Ingalls Wilder. Though
they’ve since fallen out of favor amongst the general populace, they
never stopped being delicious and are starting to see a resurgence in
the US with the return of cocktail culture.
Though shrubs were once commonly made into alcoholic beverages
spiked with rum or brandy, they’re also delightful without the booze.
They’re the perfect way to beat the heat after working outside on a hot
summer’s day, awaken the senses to the glory of spring on a picnic, or
jolt the taste buds (and conversation) at your next party.
