This hot sauce is crafted with a chile variety you won’t find anywhere else. In 2009 Shaun Winter was walking through a field of sweet Jimmy Nardello heirloom peppers when he discovered a plant that wasn’t like the others. Its peppers had spontaneously evolved from the others into something new & special – a chile with a sweet start, but a slow-building heat on the finish.
Shaun became obsessed with breeding this exciting find further to refine its characteristics, arriving at his own unique variety after years of work: the Hot Winter chile.
This thick, medium-heat hot sauce combines that newly-bred chile variety with two much older heirloom chiles: Hinkelhatz and Hungarian Hot Wax peppers. Each chile variety is carefully fermented to coax it to its flavorful peak before being combined with a blend of rice & cider vinegars, sugar, salt, and garlic. The finished sauce features an excitingly complex blend of sriracha-esque flavors.
Hot Winter believes the natural variations in each year’s chile crop are an important part of what makes their sauce unique, with some vintages being a hotter or less hot, with other changes to the nuances of the chiles’ flavors.
