Spaghetti alla Chitarra is a less common spaghetti variety – long strands with edges that are squared-off rather than round (like tagliolini, but with the thickness of spaghetti). It cooks extremely quickly and can be substituted for plain spaghetti in any dish.
Compared to other dried pastas - Filotea pasta offers a more fresh pasta-like flavor, a fluffier texture – shockingly tender for dried pasta, and faster cooking times. These qualities are due to the premium ingredients, extra care, and slower techniques that they use to produce it.
Filotea makes their artisanal pasta using a blend of 00 flour, durum wheat semolina and fresh, free range eggs. They then dry it at lower temperatures over a longer period of time than most producers. Because they make their pasta with a rougher surface, sauce clings to it better.
