Shrubs are refreshing vinegar-based beverages balancing sweet with tart
& tangy. This shrub is made with blueberries and has a dark purple
color, and fruity/musky notes.
It is sold as a concentrated syrup – ready to blend with water to
taste (it’s especially good in sparkling water) or use as an ingredient
in cocktails, beverages or dishes.
Shrubs (and their close cousins, switchels) have a long history –
they’ve been consumed in the US since the colonial era and have even
been mentioned in stories by Melville and Laura Ingalls Wilder. Though
they’ve since fallen out of favor amongst the general populace, they
never stopped being delicious and are starting to see a resurgence in
the US with the return of cocktail culture.
Though shrubs were once commonly made into alcoholic beverages
spiked with rum or brandy, they’re also delightful without the booze.
